Crayfish Rocket Quesadillas

Yes, you probably already know how to make quesadillas, and yes I’ve blogged about them before. But that was 1) back when my photography was embarrassingly bad and 2) with more run-of-the-mill ingredients. One thing I love about quesadillas is you truly can put just about anything in there. They’re a great way to clean out your fridge and an absolute life-saver on weeknights when you’re knackered* but still want to feed your family something better than KFC.

This week’s fridge clear-out was a bit of a gold mine. I had a small tub of crayfish I’d forgotten about and that was nearing its expiration date, and some fresh rocket. (Rocket is called arugula in the US but we were never formally introduced until I moved to the UK, so I’ve always referred to it as rocket. Besides, its a much cooler name.) The combination of crayfish and rocket is divine, as the crayfish is sweet ‘n salty and the rocket has a sharp peppery spiciness. Some tortillas from the cupboard and a bit of grated cheese (I used mild cheddar) and dinner was already half-way made.

I served these with my ‘pure’ guacamole. I do 2 versions – pure and party. Pure is just avocados, lime and salt, all mashed together. Party has diced tomatoes, green onion and chili pepper. I usually use pure when its to be a condiment for a more complex dish, and party, as the name suggests, when its got to stand on its own feet and be dipped into with tortilla chips. Party can also be convenient when serving fajitas or tacos, so you can get more ingredients in without having too many dishes on the table.

Today is all about showing you an example of a fun and yummy filling option and also (hopefully) redeeming myself with some much-improved (although still far-from-perfect) photography! *Knackered (pronounced NAK-urd) is one of my favourite Britishisms, meaning ‘completely exhausted’. It’s one of those words that makes you feel better just by saying it – give it a go!
